Banana Cake
Heat oven to 350 degrees Grease 2 X 9” square pans
Mix together 1 Cup Organic Applesauce 2 Cup Organic Sugar Add 4 Organic Eggs Beat Thoroughly then add 2 Cups Organic Bananas mashed 2 teaspoons Organic Vanilla Extract In a separate bowl stir together 4 Cups Organic Whole Wheat Pastry Flour 1 teaspoon Baking Soda ½ teaspoon Sea Salt Add the flour mixture to the liquid mixture alternately with 1 Cup Organic Soy Milk or variety of your preference (Organic Powdered Milk mixed with water)
Bake about 40 minutes or until a knife inserted in the middle comes out clean. Notes regarding food allergies: Milk - For folks with milk allergies, use a non-dairy milk. Egg - For folks with egg allergies – use egg substitute. Nut - This is great folks with nut allergies since making it from scratch lowers the risk of cross-contamination in the manufacturing process.

Cut in squares and enjoy by itself or if you don’t mind increasing the sugar content -
Frost with buttercream frosting ½ Cup Organic Margarine with no trans fats 1 teaspoon Organic Vanilla Extract 1 pound (4.5 Cups) Organic Powdered Sugar 3-4 Tablespoons Organic Soy Milk or variety of your preference Add the milk a little at a time until you get the desired consistency – you may not need it all.
If you want to jazz it up a bit here are some ideas: Add natural plant-based food coloring to the frosting. Add Organic Sprinkles on top Add Organic candies on top.
