Easier and faster than take-out, this is a hearty meal that is simple to make and certainly much healthier than take-out. Bring the recipe kit with you when you go camping or when you travel. You can even make it in a hot pot.
This is a great solution for anyone with strict dietary constraints who needs to control the fat, salt or allergen content of your food as well as to be sure you get healthy organic food while still getting a quick meal. And while you are at it, save money over take-out, deli or restaurant food.
This recipe is full of healthy superfoods such as black beans, pumpkin, tomatoes, soy and super spices such as turmeric via curry powder and cumin.
Serves 4
1 ˝ Tablespoons organic dried minced onion (to taste) or 1 organic finely chopped onion 1 carton 16 oz organic vegetable broth 1 15 oz can organic crushed tomatoes 1 15 oz can organic black beans 1 15 oz can organic pumpkin 1 cup organic vanilla soy milk (or milk of your preference) 1 1/2 teaspoons organic curry powder (1/3 palmful) 1 teaspoon organic ground cumin (a little less than curry) 1/4 teaspoon organic cayenne pepper (optional) (3 pinches) kosher sea salt to taste
Add all ingredients except milk and spices together and bring to a boil. Reduce heat to low and stir in milk and seasonings. Simmer for a few minutes and serve.
